Short Courses
Have you ever wanted to learn how to butcher a pig or a lamb? Or how to make sausages? We are now offering a range of short courses which run either during weekday evenings or full days at weekends. Come and learn how to break down carcasses into primals and further down into secondary joints and cuts or learn how to make and link sausages! The courses combine demonstration and practical sessions. Discover the art of butchery. Master basic knife skills. Learn how to get the best from the carcase to suit your needs. All courses will combine learning and enjoyment; you will be encouraged to get stuck in!
If you book onto a day course, why not join us in the evening in the restaurant and sample some of the delicious produce that you have been working with during the day? Bring some friends along and impress them with your handiwork! If there is a particular course that you would be interested in, just let us know! We offer bespoke courses on a range of subjects including carving, sausage making, pot roasting and slow cooking. We can tailor courses to your requirements. Jan will take you through the anatomy of the pig and you will discover how to get the best cuts from the carcase.
