A well-aged grass fed sirloin lends itself to boning into a roasting joint, as well as being cut down into marbled steaks for the barbeque or pan. Usually allow about 250g per person, with a minimum joint size of about 800g.
The creamy fat should be rubbed all over with butter or olive oil, salt and pepper and maybe some English mustard powder. A rolled sirloin joint lends itself to being cooked hot and fast, so that the outside caramelises and browns, whilst the centre remains juicy, pink and no more cooked than medium rare.
Once rested, your sirloin will be as tender as a cloud, succulent and mouth-watering, and ready for pairing with crunchy roast potatoes and root vegetables, crispy yorkshire puddings and unimaginably good gravy that can only come from the meat juices of first rate grass fed beef.
