It consists of our beautiful well hung grass fed double loin of lamb. We carefully bone the loins and roll them together in a pair, leaving the slender layer of juicy fat around the outside to keep the meat moist as it cooks.
The flavour is delicate, the texture is pillowy and soft. The noisette of lamb should really be cooked in a hot oven for a short period, so that the meat is medium rare and maintains its delectable juiciness.
