Shin does not have the most appealing looks amongst cuts of meat, being heavily marbled with gelatinous membranes. Once cooked long and slow in a casserole, it transforms into some of the most unctuous, succulent meat ever eaten. It is fantastic spiced or plain, curried or put in a pie.
