Pork Filet, as with the filet of beef, is a delicate, versatile cut from under the loin, as well as being free-range and from outdoor-bred Pork.
It is a muscle that acts as a protector to internal organs rather than a hardworking movement muscle. It therefore stays incredibly tender.
The filet from a free-range pork animal is usually about 6-8″/15-20cm long, although occasionally we have larger ones from the bacon pigs we cure.
Cut into medallions, the filet lends itself to super-tender, quick cooking such as some Chinese and Vietnamese recipes.
