We start with our matured, grass-fed dry-aged beef silversides. We then dry-cured them by hand for about three weeks. The resulting joint is ready for you to cook slowly to perfection with peppercorns, bay leaves and onion. Great either as a hot roasting joint, or hot or cold in sandwiches with pickles and mustards.
