How to Cook Short Ribs
- Oven-roasted method:
Preheat your oven to 150°C (fan 130°C)
Season or marinate to your taste
Brown the ribs first, then place them in a roasting dish with stock, wine, vegetables or aromatics
Cover tightly and cook low and slow for 4-5 hours, or until the meat is fork-tender
Internal temperature should reach 93-96°C for optimal tenderness
Rest before serving - BBQ/Smoker method:
Smoke at 110-120°C for 6-8 hours, spritzing occasionally to keep moist
Wrap in foil after 4 hours to retain moisture
Finish when internal temp hits 95°C
Rest wrapped for at least 1 hour before slicing
