Sirloin on the Bone is a true showstopper – a richly marbled, full-flavoured roasting joint that’s perfect for special occasions or a luxurious family meal. Cut from the middle back of the carcase, this classic joint includes the sirloin with its natural fat covering and the rib bone attached, which adds flavour and helps keep the meat moist during roasting. At Northfield Farm, we carefully select and dry-age our grass-fed sirloins on the bone to bring out their deep, savoury character and tenderness.
We dry-age our grass-fed sirloins on the bone for 3–5 weeks in our ageing chambers to deepen the flavour and enhance tenderness. The result is an exceptional joint that delivers old-fashioned beefiness with every bite.

How to Cook Sirloin on the Bone
- Bring to room temperature – Remove from the fridge at least 1 hour before cooking.
- Preheat oven to 220°C (fan 200°C).
- Season generously with salt, pepper, olive oil, and a smear of English Mustard.
- Roast for 20 minutes, then reduce oven to 180°C (fan 160°C) and cook for:
- 15-20 mins per 500g for rare (internal temp: 50-52°C)
- 20-25 mins per 500g for medium (internal temp: 55-57°C)
- Rest covered with foil for at least 20-30 minutes before carving to allow the juices to redistribute.
Serve with roast potatoes, Yorkshire pudding, seasonal veg, and your favourite full-bodied red wine.
