At Northfield, we were inspired by our European customers at Borough Market to produce the Cote de Boeuf roasting joint as an additional or alternative to the Forerib roasting joint beloved in Great Britain. Essentially, Cote de Boeuf is a Rib Eye Steak on the bone.
Like our Foreribs and Sirloins, the grass-fed beef joints are first chosen for their great finish. They are then matured for a number of weeks. The tougher cap muscle is removed, leaving the beautifully marbled rib eye on the bone, with a layer of buttery fat over the top to keep it moist during the cooking process. This dry-aged beauty is as visually sumptuous as it is full of flavour.
The joints can be up to 4 bones – which will feed up to 12. A single thick piece of the ribeye on the bone is a perfect roasting joint for two people. We always have cote de boeuf available, but do buy online or order for local delivery or click and collect next time you want a super treat.
