A grass-fed, dry-aged T-Bone Steak is the ultimate feast for steak lovers. Cut from the centre of the loin, it delivers the best of both worlds: a buttery Fillet on one side of the bone and a flavour-packed Sirloin with its creamy fat cap on the other. We dry-age whole loins for up to 30 days in our ageing chambers, intensifying flavour and creating the beautiful dark-claret colour and firm texture that make Northfield steaks so special.
Perfect for sharing (or for one serious carnivore), the T-bone boasts generous marbling and natural bone-in juiciness that caramelises superbly on a hot grill, BBQ, or skillet.

How to Cook a T-Bone Steak
- Bring to room temperature Remove from the fridge 45 minutes before cooking.
- Season well Rub with olive oil, coarse sea salt, and cracked black pepper (add a touch of English Mustard if you like).
- Sear over high heat Grill or pan-sear for 2-3 minutes per side, then stand it on the bone edge for 1 minute to crisp the fat.
- Finish & rest For steaks thicker than 4 cm, transfer to a 220 °C (fan 200 °C) oven for 4-6 minutes for rare or 6-8 minutes for medium-rare. Rest under foil for 5-10 minutes, then slice the fillet and sirloin off the bone to share.
Internal temps: Rare 50-52 °C | Medium-rare 55-57 °C.
