Goose Fat is considered one of the finest mediums for cooking perfect roast potatoes in. Melt a couple of tablespoons of goose fat in your roasting tin in a hot oven. Add some part boiled, roughened potatoes to the melted fat and season well with salt and pepper. Cook for 40 minutes to 1 hour in a hot oven, shaking the tin or turning the potatoes 2 or 3 times during the cooking process. Enjoy the crunch and the rich flavour!
