Lamb Leg Boned & Rolled

The boneless lamb leg can also be butterflied. This involves boning the leg, then opening out the meat into a rectangle of roughly the same thickness throughout. This allows the meat to cook evenly, either in the oven, or more especially during the summer on the barbeque.

Once butterflied, a leg of lamb will cook very quickly – usually half an hour to forty five minutes on a hot barbeque or in a hot oven will produce a glorious, versatile joint of meat oozing with deep aromas and flavours.
