Porchetta – Classic Italian Boned and Rolled Pork

This traditional Umbrian market specialty features the boned belly and loin of free-range pork, expertly stuffed with garlic, rosemary, parsley, fennel seeds, sea salt, and black pepper, then rolled into a spectacular roasting joint. Perfect for family feasts, dinner parties, or festive celebrations, our Porchetta delivers both flavour and show-stopping presentation.
Porchetta has roots in the Roman Empire, where whole pigs were boned, rolled with wild herbs, and slow-roasted for 8-12 hours in wood-fired ovens. While we don’t claim to be that old, our skilled Italian butchers at Borough Market and Rutland ensure every Porchetta is made with authentic techniques and the finest free-range, grass-fed pork.
Cooking Instructions
Oven-Roasted Porchetta
- Preheat your oven to 160°C (fan 140°C / gas mark 3).
- Place the Porchetta fat side up in a roasting tray. Rub the skin with olive oil and a pinch of sea salt for extra crackling.
- Roast slowly for 3-4 hours depending on the size of the joint, basting occasionally with its own juices.
- Increase the oven temperature to 220°C for the last 20-30 minutes to achieve crispy, golden crackling.
- Rest the Porchetta for 15-20 minutes before carving. Slice thick or thin to serve.

Take a little time and have a little patience with the preparation, which you must do especially when it comes to getting the crackling right, and you will be blown away. Absolutely gorgeous…again.
