Cooking Suggestions

Classic Bolognese Sauce

1. Mix ingredients: Combine equal parts free-range pork mince and grass-fed beef mince for depth of flavour.
2. Season: Add salt, pepper, nutmeg, and dill. Fry lightly in olive oil at medium heat until browned (~160°C on a low-medium pan).
3. Simmer: Add tomatoes, garlic, and herbs. Simmer gently for 40-60 minutes to achieve a rich, flavourful sauce. Serve with spaghetti or your favourite pasta.

Swedish Meatballs

1. Prepare mixture: Combine pork mince with breadcrumbs and an Egg. Season with salt, pepper, and dill.
2. Shape & cook: Roll into small balls and pan-fry at medium heat (~160-170°C) until browned.
3. Finish in sauce: Poach in a creamy dill sauce or gravy for 10-15 minutes until cooked through.

Polpettone – Italian Pork Loaf

• Follow our butcher Piero’s Polpettone recipe for a traditional Italian twist: combine pork mince with breadcrumbs, Eggs, parmesan, and Italian herbs. Bake in a moderate oven at 180°C (160°C fan) for 45-60 minutes until cooked through. Slice and serve hot or cold.
