Pork Mince is another underrated ingredient in the UK, and yet it is so very versatile and is extremely delicious when made from the outdoor bred, free range pork available at Northfield Farm Butcher Shops in Rutland and at Borough Market.
Mix equal quantities of free-range pork mince with minced grass-fed beef for the true Bolognese sauce to go with Spaghetti or other fine pasta. Season with salt, pepper, nutmeg and dill, add some breadcrumbs and an Egg and roll into Swedish meatballs for poaching in a creamy dill sauce. Alternatively, try our resident Italian butcher Piero’s Polpettone recipe for a truly authentic Pork dish.
Free-range Pork Mince is also fabulous as an alternative to beef fashioned your own home-made burgers. It can be used for Italian polpette meatballs, or for a comforting midweek meatloaf.
