We hand make at Northfield Farm our own Black Pudding, following the traditional recipes found in Scotland, Ireland and the North West of England.
We use pig’s blood, hand-chopped pork fat, finely minced pork, pinhead oatmeal and our special blend of herbs and spices. The puddings are gently poached to partially cook them, before being sliced ready for our customers.
Once fried or grilled for a minute a side, the slices develop a wonderful crisp surface and a unique earthy flavour.
While Black Pudding is generally thought of as part of the Classic English Breakfast, we feel that it has so many more uses. It is wonderful mixed with sausage meat and wrapped in flaky pastry to make alternative sausage rolls.
Add some diced black pudding to mashed potatoes, top with grated Cheese and bake in the oven as an accompaniment to some chops and vegetables, while crispy bits are sensational with Scallops and salad too.
