Pappardelle are very wide, flat, long ribbons of pasta. They originated in Tuscany, and are much favoured for the very thick, robust sauces served in the winter which often include slow cooked beef, wild boar and pork, and game.
They are also divine served with a rich, creamy, mushroom and wild mushroom sauce.
Seggiano organic Pappardelle is made in the unspoilt Orcia Valley of southern Tuscany, using premium high density, 100% Tuscan organic durum wheat. Seggiano pastas are bronze drawn, rather than machine rolled, which gives it a rough, matt texture that is porous and binds perfectly with sauces. The nutritional quality of the grain is preserved by the slow drying process which in combination with the premium quality of the durum wheat used, gives the cooked pasta its even, firm consistency and excellent flavour.
