Spaghetti, the classic long round pasta shape. Italians would never eat it with a meat based sauce, favouring spaghetti for thin sauces that will cling to its narrow round shape. Cacio e Pepe, Carbonara, Fresh tomato and basil sauce using new season’s freshly picked and barely cooked finely chopped tomatoes and garlic, or Spaghetti alla Puttanesca would all be favoured sauces.
It would also be used for sauces that go well with Linguine Pesto, cream and thin lardons of bacon, bolognese, and the classic alla Vongole – clams in a rich tomato sauce. We at Northfield say – if you like Bolognese with your pasta, no matter what the shape, then fill your boots!
Seggiano organic Spaghetti is made in the unspoilt Orcia Valley of southern Tuscany, using premium high density, 100% Tuscan organic durum wheat. Seggiano pastas are bronze drawn, rather than machine rolled, which gives it a rough, matt texture that is porous and binds perfectly with sauces. The nutritional quality of the grain is preserved by the slow drying process which in combination with the premium quality of the durum wheat used, gives the cooked pasta its even, firm consistency and excellent flavour.
