At Northfield Farm, we take pride in dry-aging our forerib on the bone for an extended period of 60 to 80 days, developing a deeper, more complex flavour profile that discerning beef lovers crave.

How to Cook Beef Forerib (60-80 Days Dry-Aged)
- Preparation: Remove the joint from the fridge at least 1 hour before cooking. Rub generously with olive oil or softened Butter, sea salt, cracked black pepper, and English Mustard for an extra flavour boost.
- Preheat Oven: 220°C (430°F)
- Sear: Place the joint in a roasting tin and roast at 220°C for 20 minutes to develop a beautiful caramelized crust.
- Roast: Lower the oven temperature to 160°C (320°F) and continue roasting for:
- Rare: 15 minutes per 500g
- Medium-rare: 18 minutes per 500g
- Medium: 20 minutes per 500g
- Rest: Remove from oven, tent loosely with foil, and rest for at least 30 minutes to allow juices to redistribute for maximum tenderness and flavour.
